It is made with biodynamic Pinot Gris grapes from Keeler Vineyards in Oregon, with half the wine distilled in-house into eau-de-vie to strengthen the base. The botanicals feature Timur pepper, a citrusy Himalayan relative of the Sichuan peppercorn, and local elderflower from Briermere Farms on the North Fork. Crisp and dry, it makes a distinctive martini, while the elderflower's floral sweetness makes it ideal for a refreshing spritz.
